Here, every month, we post recipes from Ma’s Kitchen …  “Summertime, when the livin’ is easy”  Glorious hot days and long balmy evenings sitting on the terrace having a meal with friends.

Here is an easy meal full of fresh summer flavours that will please everyone – it will not take an age to prepare and not cost an arm and a leg!!

~ Crudités with an instant onion dip

~ Garlic bread with cheese and herbs

~ Grilled mackerel  with ginger, chilli and lime salsa served with spiced couscous and stuffed tomatoes

~ Baked nectarines with almonds

I would prepare them in the following order – Baked nectarines as these are delicious served cold, then the garlic bread as this can be got ready to bake and put aside, as can the filling for the tomatoes.   Make up the ginger, chilli and lime Salsa and set aside and the spice mix for the couscous.  The crudités just need to be washed and chopped just before serving and the onion dip is instant.
