Cream of Spinach Soup

Ingredients:

  • 2 medium onions (peeled and sliced)
  • 6 blocks of frozen spinach
  • 2 vegetable or chicken stock cubes
  • 1 ½ litres of water
  • 1 tablespoon crème fraiche (Optional)
  • Full cream milk
  • Salt and Pepper to taste
  • Cream to garnish (Optional)

Method:

 

  1. Put onions, spinach, stock cubes into pan with the water and bring to the boil
  2. Turn down and simmer for 10 minutes.
  3. Liquidise and add crème fraiche, if using, and add sufficient milk to thin soup down to the consistency required.
  4. Taste and add salt and pepper to your liking.  Re-heat and serve with a swirl of cream (Optional)
