Gambas and Papaya Salad

Ingredients:

  • 2 red chillies
  • 30 ml freshly squeezed orange juice
  • 60 ml freshly squeezed lemon juice
  • 150 ml olive oil
  • Salt and pepper to taste
  • 400 g cooked, peeled and deveined Gambas
  • 2 ripe Papayas
  • Sprigs of fennel to garnish

Method:

  1. Remove seeds from chillies and discard them. Place chillies in a blender with the juices, olive oil, salt and pepper.  Blend together.
  2. Pour over the gambas and leave to marinate.
  3. Cut the papayas in half and scoop out the seeds – thinly slice the flesh and arrange on serving plates.
  4. When ready to serve, spoon the gambas mixture over the papaya slices – garnish with the sprigs of fennel.
