Grilled Mackerel with Ginger, Chilli and Lime Salsa

Ingredients:

  • 4 mackerel gutted and cleaned
  • 1 tab olive oil

Method:

1.  Score both sides of each fish (not quite down to the bone).  Brush with the olive oil and cook under a hot grill for 5-6 mins each side

Salsa

Ingredients:

  • 1” piece of fresh root ginger, peeled and grated
  • 1 large red chilli, seeds removed and finely chopped
  • Juice and zest of 2 limes
  • 1 clove garlic, peeled and crushed
  • 1 tbs clear honey
  • 1 tsp sesame oil
  • 1 tsp Thai fish sauce
  • 2 tbs olive oil

Method:

Mix all the ingredients together and spoon over the grilled fish
