Rhubarb and Ginger Crumble

Ingredients:

  • 700g rhubarb
  • 4 tablespoons sugar
  • grated rind and juice of a lemon
  • 150g crystalised ginger

Crumble ingredients:

  • 100g plain flour
  • 100g butter
  • 75g sugar
  • 2 tablespoons porridge oats

Method:

  1. Pre-heat oven to 180oC
  2. Wash and trim rhubarb and cut into 5cms lengths.  Put into a shallow, ovenproof dish
  3. Chop ginger into cubes and add to the rhubarb
  4. Sprinkle over the sugar and the lemon zest and juice
  5. Make the crumble – rub the butter into the flour
  6. Add the sugar and oats and spoon over the rhubarb and ginger.
  7. Bake for approx. 30 minutes until the top is golden and the rhubarb tender.

Serve with custard or cream
